If you find a cheaper steel on the market- remember it's a cheaper steel... NOT a Darebuilt Steel
This means when you place a pizza on the steel, the dough is cooked by the transfer of heat stored in the steel - rather than just the ambient heat in the oven.
There is a lot of information on the web about how to condition your oven steel. A simple way is to heat the steel well at least one hour and until 350 degrees. Use a thick cloth that will not give off lint and apply a very light layer of vegetable oil, canola oil or melted vegetable shortening. These are all fats with high smoke points, which means they will bake on cleanly instead of turning sticky. Do not use olive oil or butter to season your cast-iron pan — they're great to cook with, just not for initial seasoning. Let cool overnight and coat one is done and it is ready to use. The more applications of this are done the better it gets.
Because we cut so much steel now and then we get steel that may have a slight imperfection, so minor scratch, pitting and or nonhomogeneous materials from the mill. This has been the case especially since the steel mills have started up and re beginning operating processes that have been affected by Covid related stoppages. These steels are perfectly fine but simply cannot be sold as Perfect steels. These steels will season just fine and no one can tell the difference once seasoned and it gives us an opportunity to divert them from scrap bins and landfill, while providing our budget conscious consumers a great deal on a great steel.
